Potato Leek Soup

3 medium Yukon golden potatoes1/2 cup of yellow onions3 cups of leek onions chopped1 cup of homemade vegetable stock2 cups of 1% milk2 TBSP of olive oil1/4 of tsp of salt1/4 of tsp of black pepper3 small cloves of garlic
1- Boil the chopped potatoes until cooked.
2- meanwhile saute the onions and garlic and leeks. on medium heat
3- Once cooked--add the cook potatoes to the mixture and add the salt and pepper to taste. Cook for another minute or so and add the stock.
4- cook on low heat with the stock.
5- turn off the heat and pour the mixture in a blender/food processor/ or use a hand held blender.
6- add the milk and mix away
at this point you choose to chill or enjoy as is. happy eating.
