Sole Stuffed with Spinach & Feta Cheese

Ingredients
2 teaspoons olive oil, divided1 (4 oz) Petrale Sole fillet2 cups fresh spinach1 lemon wedge1 tablespoon feta cheese, crumbled1/4 cup panko crumbs
Directions
1) Preheat oven to 400 degrees.
2) Heat 1 teaspoon olive oil in a nonstick skillet over medium-high heat. In batches, cook spinach until wilted and no excess liquid remains. Set spinach aside.
3) In a small baking, add the remaining 1 teaspoon olive oil. Rub one side of sole fillet on the baking dish, smearing olive on the bottom side of the fish.
4) Mix feta and spinach together.
5) On the top side of the fillet, squeeze lemon wedge over the fillet. Then put spinach mixture on top of the fillet in the middle of the fish. Roll up the fish and roll the outside with panko, making sure it adheres to the fish and olive oil coating.
6) Return rolled up fish to the baking dish and cook in oven for 12 to 15 minutes or until fish is no longer opaque and is flakes easily.
7) Serve with a side salad and wild rice.
