wheat-free applesauce muffins

Ingredients
1 cup brown rice flour3/4 cup barley, milled into flour3/4 cup sugar1 t baking soda2 t baking powder1 t cinnamon1 cup kefir, buttermilk or milk (low-fat)1 larged egg1 cup unsweetened applesauce
Directions
Mix dry ingredients together with a whisk. In a seperate bowl, mix wet ingredients. Combine the two, stirring only to mix. Pour into greased muffin pan. Bake at 425 17-20 minutes.
