Peanut Soba Noodles

Ingredients
8 oz. uncooked soba noodles1/3 c. water or vegetable stock4 T. peanut butter 1 T. fresh minced ginger1 T. lite soy sauce2 T. honey2 cloves garlic, minced1 T. crushed red pepper flakes (more or less to taste)
Directions
Cook noodles according to package directions (omitting any salt and fat called for); drain. Whisk remaining ingredients together (microwave mixture for 15-30 seconds if peanut butter is not dissolving well). Toss pasta with sauce.

Goes well with steamed veggies, seafood, chicken, or pork.

    This was really good and very simple to make! I modified it a bit to my taste: reduced the honey to just 1 Tbsp and added about 1 tsp of rice vinegar. I've played around with various peanut recipes and this one was one of the best! - 4/12/10

    I make something very similar - my daughter requests it all the time. I add 1/2 cup green onions or cilantro and and a few raw peanuts as a garnish. I also top with grilled Chicken breast for a complete dinner. Thanks for posting this. Now I don't have to enter everything! - 4/28/12

    OMG I loved this! I did tweek it a little though. I used PNB & Co's The Heat Is On PNB & left out the pepper flakes. I also used ground ginger & garlic powder to make a smoother sauce. I topped it with honey roasted sliced almonds & sunflower seeds. It was Yummy!!!! - 8/15/08
