2 cups spelt flour1 cup sugar2 tsp. baking soda1/2 tsp. salt1 cup grated carrots1 cup grated parsnips1/2 cup chopped pecans1/2 cup shredded coconut2 large eggs1 cup vegetable oil1 tsp. vanilla extract
Preheat the oven to 350 degrees. Mix flour, sugar, baking soda, and salt into a mixing bowl. Stir in carrots, parsnips, raisins, pecans, and coconut. In another bowl, combine the eggs, vegetable oil, vanilla extract, whisk until smooth. Pour wet mixture into flour mixture and stir until the batter is just blended. Spoon equal amounts of batter into the wells of the muffin tin. Bake until muffins spring back to the touch and are golden brown, about 35 minutes. Allow to cool on a wire rack for 5 minutes.
