Banana bread

Ingredients
1 ½ cups whole wheat flour¾ cup ground flaxseed2 tsp baking powder1 tsp baking soda1 tsp cinnamon½ tsp salt1 cup mashed very ripe banana (about 3)¾ cup splenda¾ cup buttermilk½ cup liquid egg1 tsp vanilla
Directions

1.Preheat oven to 350. Oil a 9 by 5 inch loaf pan.
2.In bowl, stir together flour, flaxseed, baking powder, baking soda, cinnamon and salt.
3.In another bowl, mix together banana, splenda, buttermilk, egg and vanilla. Pour into flour mixture and stir just until moistened.
4.Pour batter into prepared pan. Bake for 45 to 50 minutes or until tester inserted in centre comes out clean. Let cool on rack.

Makes 1 loaf.
