6 large eggs1/4 c 1% milk2 plum tomatoes, chopped1 cup sliced mushrooms1 red pepper chopped1 green pepper chopped1 medium onion chopped1 zuchinni chopped3 cloves garlic dicedcooking sprayspice as desired
preheat oven to 350 degrees
spray large skillet with cooking spray, add veggies and sautee until tender about 3-5 min, mix eggs and milk in a bowl pour over veggies (sprinkle with salt, pepper and paprika if desred) place in preheated oven for about 20 mn or until eggs are no longer jiggly... enjoy :-)
serves 4 as main course or 8 as side dish

I really liked this recipe; it is a basic omelet recipe, but you can do so much with it by just adding your own choices of veggies, I added just a teaspoon of cheese, combined with toast, spray butter and a little jelly with applesauce and ff milk, now I am ready for my walk. Thanks - 3/8/10
