Low-Fat Minestrone

Ingredients
4 cups vegetable broth 1 chopped onion 1 chopped celery stalk 1 14.5-ounce can Italian style stewed tomatoes 1/2 cup uncooked small pasta1 15-ounce can kidney beans, drained and rinsed 1 15-ounce can cannellini beans, drained and rinsed 1 16-ounce package frozen Italian style mixed vegetables 2 teaspoons parsley flakes 1/2 teaspoon basil 1/2 teaspoon oregano 1/2 teaspoon marjoramfresh ground pepper to taste parmesan (optional)
Directions
Place onion and celery in a large pot with 1/4 cup of the vegetable broth. Cook, stirring occasionally for 5 minutes. Add remaining ingredients. Bring to a boil, reduce heat, cover and simmer for 30 minutes. Sprinkle with soy parmesan cheese, if desired.
