Tilapia over Spinach with a Garlic Wine Butter Sauce

Ingredients
2 (4 oz.) tilapia filets1 T. flour1 egg whitelemon pepper1/4 c. bread crumbs1 T olive oil (divided)1 (10 oz.) package fresh spinach1 T. butter1/4 c. white wine2 t. garlic, divided
Directions
Sprinkle tilapia with lemon pepper and dust with flour. Dip in egg white, then coat with bread crumbs. Spray a fry pan with cooking spray, then heat to med-high. Add 1 t. olive oil and roll to coat pan. Fry fish 3-4 min. on each side or until nicely browned. Meanwhile, heat 2 t. olive oil in a large saute pan. Add 1 t. garlic and spinach. Toss to coat. Cook for a couple of minutes or until spinach is wilted. Salt and pepper lightly.

Divide spinach onto 2 plates and top with fish. In the fish pan, add 1 T. butter, 1 t. garlic and 1/4 c. wine. Cook it for a couple of minutes, then pour it over the fish and spinach.

    Thank You sooooo much for sharing your recipe. Anyone who reads this needs to try it. My Hubby even loved it. It was the first time I cooked spinach, ate it and loved it. My Mother in law made fresh cook spinach not to long ago and it was okay but this blew it out of the water. And the fish Yummo!!! - 3/5/10

    That's awesome to hear; I'm so glad you like it! My kids will even eat the spinach this way. You can use the same technique on chicken.
