Quick 'N Hearty Vegetable Barley Soup

Ingredients
.5 pounds lean ground turkey1/2 cup chopped onion1 clove garlic, minced5 cups water1 (14.5 oz.) can whole tomatoes, diced3/4 cup Quick barley1/2 cup sliced celery1/2 cup sliced carrots2 beef bouillon cubes1/2 teaspoon dried basil1 bay leaf1 (9 oz) pkg. frozen mixed vegetables
Directions
In a 4-quart saucepan or Dutch oven, brown meat. Add onion and garlic' cook until onion is tender. Drain. Stir in remaining ingredients except frozen veggie. Cover; bring to a boil. Reduce heat; simmer 10 minutes, Stirring occasionally. Add frozen veggies; cook about 10 minutes or until veggies are tender. Additional water may be added if soup becomes too think upon standing. Makes 8 (1 cup) servings

    Love this recipe; although, I substituted the ground turkey with boneless, skinless chicken breast. Great for this cold weather. :) - 10/28/10
