Julia's veggie Marinara

Ingredients
Onion, garlic, carrot, celery, yellow bell pepper (opt), red bell pepper, zuchini (opt), canned tomatoes (no salt added), black pepper, salt, red pepper flakes and Italian seasonings to taste
Directions
Saute onions until soft in the olive oil in large pan. Add in celery and garlic and Italian seasonings until fragrant and soft. Add carrots. Add bell peppers, tomatoes, and any other yummy veggies around. Add a pinch of salt. Simmer for 20-30 min. Season to taste.
I make this in huge batches and freeze in portions - reheats wonderfully.
