1 cup Zucchini1/2 cup flour2 egg whites2 Tbsp green curry paste1 Tbsp fish sauce1 green onion, chopped1 birds eye chili (sliced)1 handful herbs such as cilantro, mint, Thai basil (chopped)1 tablespoons oil or cooking spray
Mix the zucchini, flour, egg, curry paste, fish sauce, green onions, birds eye chili cilantro and mint in a bowl. Heat the oil in a pan. Spoon the zucchini mixture into the pan and cook until golden brown on both sides, about 4 minutes per side. Serve with spicy peanut sauce.
