Pumpkin Choc. Chip Muffins

1.5 c. whole wheat flour1.5 c. all purpose flour2 tsp. baking powder2 tsp. baking soda2 tsp. ground cinnamon.5 tsp salt4 large eggs2 c. granulated sugar1 can (15 oz) pure pumpkin1 c. veg. oil or applesauce2 c. semi-sweet choc. chips
Preheat to 350
Combine whole wheat flour, all-purpose flour, baking soda, baking powder, cinnamon, and salt in medium bowl.
Then combine slightly beaten eggs, sugar, pumpkin, and oil / applesauce in blender.
Mix well before adding dry ingred.
Stir in morsels and spoon into sprayed muffin pan.
Bake muffins for 21 - 23 minutes or mini-muffins for 14 minutes.
Cool on rack for 5 minutes and then remove from pan.
Makes around 40 muffins.
