Carrot Raisin Muffins

Ingredients
2 cups whole wheat flour2 tsp baking powder1 tsp cinnamon1/2 tsp salt1/2 cup vanilla yogurt1/2 cup apple sauce1/3 cup honey2 tbsp orange juice1 cup shredded carrots (approx. 2 medium carrots)1/2 cup raisins
Directions
Combine first four ingredients in a large bowl.

Whisk together next four ingredients in a small bowl.

Fold carrots into small bowl, and stir contents of small bowl into large bowl.

Gently fold in raisins.

Made 9 muffins for me. Cook 12-13 minutes. Cool 10 minutes in the pan, then on a wire rack.

(*I used muffin cups so I wouldn't have to use oil or butter to grease. Next time I would take them out of the paper muffin cups immediately. once they cooled completely, it was much harder to get the paper off)
