Sauteed Zucchini

Ingredients
3 C sliced zucchini1 T olive oil1/2 C sliced or chopped onion1 large clove garlic, minced2 T fresh basil1 T dried oregano
Directions
Heat olive oil in large non-stick skillet over medium heat. Add onion and garlic and saute until onion is translucent. Add zucchini and cook approx. 5 minutes then add herbs. Contine cooking another 5 minutes.

    This was pretty good, but to me it needed a bit more seasoning. I'll make it again and will experiment a bit with seasonings -- maybe onion salt or Nature's Seasoning, in addition to what the recipe calls for. - 6/24/07
