Ginger Fried Rice with Leftover Chicken

Ingredients
1-2 tbsp canola oil1-2 tsp toasted sesame oil1 med onion, chopped4 stalks celery, chopped1 chunk fresh ginger, minced (to taste)4 oz fresh mushrooms, chopped6 oz chicken breast (grilled or poached), cut in bite size pieces3 c brown rice1 lg egg1-2 tbsp soy sauce
Directions
Heat oil in frying pan on medium high heat. Saute vegetables until translucent. Add ginger, mushrooms, chicken and heat through. Add rice. Continue heating and stirring until very hot. Add egg and stir quickly to coat rice and cook egg. Stir in soy sauce.
