1/2 small onion1 garlic clove1 small potato (peeled)1/2 medium tomato1/4 yellow bell pepper2 large spinach leaves (or 5 stalks of rape blossom)enoki mushrooms (however much you like)olive oil (enough to saute the onion and garlic)1/10 cup orange juice2 tbsp soy sauce.
start with garlic, onion and olive oil. saute lightly until onions start to turn opaque. add potato. after 2 minutes add OJ, soy sauce and shrimp. as soon as the shrimp are pink on one side, flip them and add the rest of the ingredients. Cook until spinach is bright and tender. remove from heat and serve immediately.
