Golden Pancakes

Ingredients
1 cup uncooked whole-grain oats (non-instant)6 egg whites (you can use 3 whole eggs if you'd like)1 cup fat-free cottage cheese1/2 tsp vanilla1/2 tsp cinnamon(optional) 2 tsp sugar--if you must have it--but they truly are good without the sweetening added--not added into the calories
Directions
Add all ingredients in your blender and blend on medium speed until smooth (about 1 minute). Then pour onto hot griddle and cook until bubbly then flip over to cook until golden brown.

For your fruit for the morning, add fresh strawberries, blueberries, raspberries, etc. I also like 1/2 a banana mixed with 3/4 cup of berries--yummy!

Another great substitute for syrup is non-fat yogurt. I like vanilla or a berry yogurt.

Makes 9 4 inch pancakes. Serving size is based on 1 pancake.
