Chicken Enchiladas with Green Sauce

Ingredients
Green Enchilada sauce2 chicken breasts cooked & shredded3/4 cup Reduced fat Cheese4 oz Queso Fresco Cheese2 tbs Chopped Cilantro1/2 diced onion12 White corn tortillas1 can fat free chicken stock
Directions
Soak tortillas in fat free chicken stock. Put 1/2 enchilada sauce in skillet with shredded chicken.
In a bowl mix 1/2 cup cheese, queso fresco,
and cilantro. Take tortilla put a good size spoon full of chicken and a spoon full of cheese mixture, roll and put into pan seam side down. Repeat till all is used up. Cook for 30 minutes in a 350 oven
covered. Add last bit of cheese and cook 10 minutes uncovered.

    You can make your own green sauce by blending green salsa, cilantro, onion and garlic. It really makes a huge difference. But besides that I stuck to the recipe, very good. You can use low sodium chicken stock to reduce sodium. - 1/16/10

    This sounds very good..but it does have a lot of sodium...and 11 grams of fat..One would have to be enough with those numbers..see if you could change the corn tortillas to spinach ones say..and make the fats lower with different cheeses - 6/20/07
