Baked Chicken Parmesan

1 1/2 or 2 pounds of boneless, skinless chicken breast1/4 cup egg substitute1/2 cup breadcrumbs1 1/2 cups lite tomato sauce2 oz part-skim mozzarella cheese, shredded1/4 tsp basil1/2 tsp garlic powder1/2 tsp oregano
Rinse chicken breast6 and dip into the egg substitute. Mix in another bowl the breadcrumbs, basil, oregano and garlic powder. Place next to egg substitute. Dip chicken from egg into breadcumbs and coat well.
Pour 1/2 cup tomato sauce on the bottom of a baking pan. Place breaded chicken breast in pan.
Using the remaining sauce, cover each chicken breast. Even sprinkle the shredded cheese over each chicken breast.
Cover pan with aluminum foil.
Bake in preheated over 375F for 20 minutes. Remove foil and continue baking for 10-15 minutes longer to allow cheese to melt and chicken is cooked through.
Serve with pasta or your favorite vegie.

My family thought "it needed something." The reason I made this is because of the low calorie. I think they missed the salt. Suggested that I salt the chicken before the breading. Also the portion of one breast was too big so only ate half a breast. Will do again but will try other recipes also. - 10/5/11

This was amazing. I did a little differently due to food allergies. I used egg whites only and I made my own bread crumbs with Rice Chex since I'm gluten free. I also used spaghetti sauce instead of tomato sauce and seasoned it even more with oregano, pepper, garlic powder. It was fabulous! - 9/1/11
