Spicy Fried Fish

Ingredients
1# Fish (I like Talapia or Orange Roughy)1/4 Cup Canola Oil6 Green Onions, cut into 1" pieces1 T. Sugar1/4 tsp. freshly ground black pepper1 fresh red chili pepper, seeded & sliced (I leave this out if kids are eating)4 Garlic cloves, minced3 tsp. finely grated fresh ginger2T. Soy sauce1 T. Lemon Juice2 T. Chopped fresh cilantro (this can be left out too)
Directions
Wash and wipe fish well. Fry in hot oil on both sides until lightly browned and cooked through. Let oil cool slightly, then fry green onions until soft. Add garlic and ginger and cook on low heat, stirring until soft andf golden. Add soy sauce, sugar, lemon juice and pepper. simmer the mixture for 1 minute. Pour over fish. Garnish with cilantro and chili pepper. Serve with steamed rice.
