Cheese and Onion Pasties

* Mashed Potatoes, 3 cup * Roquefort Cheese, 70 grams * Goat Cheese, Soft, 30 grams * Onions, raw, 1 medium (2-1/2" dia) * *Puff Pastry, 2 sheet * Egg, fresh, 1 small * Tarragon, ground, 5 grams * *Fleischmann's Olive Oil Spread, .5 tbsp * Cheddar cheese, 30 grams
Fry onion. Boil potatoes until mashable - I leave skins on cos I am lazy and hate peeling, you can do either.
Heat oven to 220C
Mash together potatoes, cheeses, tarragon and onion with a knob of olive spread or butter.
Cut pastry into quarters, I roll out pastry with wholemeal plain flour to stop it sticking, makes the pasties look wholesome when the bits stick too.
Spoon filling into pastry and close edges by pinching or with a fork. The filling nearly always spills out - I am yet to suss out why, feel free to share if you have any tips.
Brush with egg.
Cook for 25 mins or until pastry is puffed up and golden brown.
