2 small red potato1/2 cup bell peppers(green, yellow, red, orange) whichever you have on hand1/2 cup sweet onions or scallions1 cup of baby portabello mushroom1 plum tomato1 cup egg beaters1 tbsp olive oil1 tbsp olivio spread
Slice potato into thin round slices. Dice bell peppers, onions, tomato and mushroom. Set aside
In a frying pan add olive oil and red potato. Cook potatoes until they brown. Add all vegetables. Saute a few minutes. Add olivio spread and stir into vegetables. Pour egg beaters into frying pan. Set temperature to low heat and cover. Cook until egg is dry and flip, if desired.
