2 La Tortilla Factory Low Carb Tortillas1/4 cup Cooked chicken, shredded or chopped1/4 cup Shredded Cheddar Cheese1 Tbspn Goat Cheese, crumbled 1/8 Cup chopped apple 2 oz Onion 1 small sweet pepper (the little itty bitty ones)1/8 of an Avocado butter sprayChipotle Mayo:1/4 cup Greek Yogurt1 tbspn Light Mayodash half and half 1 tbspn Chipotle Powder dash Chili Powder
Preheat Oven to 350
Caramelize onion in butter spray
Sprinkle cheddar cheese over one tortilla.
Add apple, chicken, avocado, sweet pepper, green onion, goat cheese and caramelized onion.
Top with other tortilla.
Bake for 10 minutes on a baking sheet coated with nonstick cooking spray.... turn over in the middle if possible.
