potato omelet

Ingredients
18 large eggs, 8 slices of american cheese, 5 large potatoes, 1 cup diced green pepper, 2 medium onions
Directions
clean and dice onions, peppers, and potatoes.
saute onions and peppers until tender and brown.
remove from pan, add diced potatoes and saute until tender and browned. mix peppers, onions and potatoes in frying pan. crack eggs and beat, add salt and pepper, and 1/2 cup of water continue beating. add egg mixture to frying pan stirring until egg is cooked. turn heat off add cheese slices on top of omelet. serve as is or over toast or toasted bagel.
