Chicken Tacos

Ingredients
1 lb. boneless, skinless chicken breasts 1 package taco seasoning 3/4 cup water 1 large tomato 2 cups shredded reduced fat cheddar cheese 4 cup shredded romaine lettuce 8 baked taco shells (or tortillas)
Directions
1. Grill chicken breasts on grill or cook with olive oil in skillet until chicken is white all the way through. Cut into strips or cubes, and combine with water and taco seasoning in skillet and bring to a boil. Simmer and stir until desired consistency is reached.
2. Heat taco shells (or tortillas) according to directions on package.
Dice tomatoes, shred cheese, and shred lettuce, all to desired amounts.
3. Pour two oz. of chicken into shell, and top with desired topping.
Makes 8 servings (8 tacos).

I absolutely love this recipe--there couldn't be anything easier. I make several chicken breats worth and add a little more seasoning and eat it for dinner that night and then take it to work all week. And I agree with pp, I eat 2 of these and I'm stuffed. We make this once a week! I pre-cook the chicken breast and then just warm it in a pan with either red or green salsa (it's really good with the green!) - you can use mild, medium or hot depending on your tastes! For some fiber, add fat-free refried beans as a side dish! YUM! - 3/13/09

I mixed a can of rinsed black beans, whole kernel corn, and green chiles together....throw it in the pan when you're done cooking the chicken just spray or oil a little bit, leave on a low-medium setting, cook until they are warmed through and add that to the taco instead of more meat! - 11/11/10
