Ingredients
400g cooked chicken, shredded375g cucumber, sliced thinly, lengthways4 spring onions/scallions chopped diagonally4tsp tahini paste1tbsp white rice vinegar2tsp English mustard1tbsp sesame seeds, toastedOptional: Handful pea shoots (these are not included in the nutritional info of these recipes)
Directions
1. Mix the spring onion, tahini paste, white rice vinegar and english mustard in a bowl. Add the chicken and mix thoroughly.

2. Put cucumber slices on a large plate and toss with chicken. Garnish with the sesame seeds and pea shoots (if using them)

    Served with Cilantro/lime rice and roasted Zuc. Could have been spicier. We used 1" thick chops. Also, substituted highly food processed dry roasted peanuts for 3/4 of the Peanut Butter as I only had 1 TBS of PB. This was a great substitute! - 10/22/10
