Chinese Salad

6 cups broccoli slaw (1 bag + 1 cup)3 scallions, chopped1-3oz pkg. oriental Ramen noodles with seasoning pack1 scant cup slivered or sliced raw almonds (~3 oz)1 T raw sesame seeds1/2 cup canola oil3 T Rice vinegar (or cider vinegar)1/4 cup Splenda
Put the broccoli slaw in a large bowl; add chopped scallions and stir.
Crumble the Ramen noodles into a broiler safe pan. Add the sesame seeds and almonds, stir well. Broil on high approximately 2 minutes (stir after one minute); watching carefully to make sure nothing burns! Let cool a bit then add to broccoli slaw mix.
In a jar with a tight lid, combine the oil, Splenda and the contents of the noodle seasoning pack. Shake well to blend then pour all of the dressing over the salad. Toss to combine. Refrigerate a couple of hours to cool and let seasonings mix. Makes 6 one cup servings.
