Chicken and wild rice soup

Ingredients
1 cup finely chopped carrots1 cup finely chopped celery1 cup finely chopped onions4 cups chicken broth3/4 cup wild rice2 full chicken breasts, no skin, chopped into approx 1/2 inch cubes2 Tbs butter2 Tbs flour2 cups 1% milk
Directions
Brown vegetables in skillet using vegetable spray. Add 4 cups broth. Bring to a boil. Add wild rice. Simmer for 30 minutes. Add chicken, Simmer for 30 minutes longer, or until rice is tender, and chicken is thoroughly cooked. In a separate skillet, melt butter, add flour and cook for approx 2 minutes, add milk, Stir until you have a white sauce. Add to soup. Serve with whole wheat bread soup bowls or your favorite rolls.

    I made this today and it's easy and very good! I only had 1 can (about 2 cups) of chicken broth, so substituted water for the other 2 cups, and it turned out fine. - 10/14/12
