Cherry Almond Carrot Cake

Ingredients
1 1/4 cup shredded carrots9 cherries2/3 cup whole wheat flour1/3 cup oatmeal1 1/2 tsp baking powder1/4 cup nonfat milk1/4 cup applesauce1/4 cup Better n'eggs (or 1 egg)10 almonds (14 g)2 tsp cinnamon1 tsp ginger1 tsp cloves
Directions
Preheat oven to 350 degrees.

Combine dry ingredients, make a well in the center and add the wet ingredients.

Mix thoroughly and throw in almonds and cherries (or reserve until later as a topping).

Pour batter into an oiled pan (place cherries and almonds in a decorative pattern on top if they are not already included in the batter).

Bake for 23-25 minutes (until toothpick comes out clean).

Yield: 9 delicious squares
