Chicken brushetta

Ingredients
chicken, spices, garlic, onion
Directions
Dice chicken (small pieces) and cook with garlic, salt, and pepper with 2 tbl. olive oil. While chicken is cooking, dice mushrooms, add remaining ingredients and mix well. Once chicken and garlic have cooked through, add tomato mixture. Adjust your seasons for taste. Bring to a boil to bring out tomato juices then reduce to simmer. Simmer covered for 10 minutes. Remove cover and increase heat slightly to evaporate some of the water in the mixture. Serve over whole wheat pasta or complex carb of your choice.
