Peanut Butter Protein Balls

3 C Quaker Old Fashioned Oatmeal (not instant)3/4 C powdered milk (I will increase protein powder by this amount if I don’t have milk)1 C whole flax seed (not milled) -- OR 1/2 C wheat germ, (I typically don’t use wheat germ, I do 1C of flax seed. Use Bob’s Red Mill brand available in the health food section)1 C Whey protein powder 1/2 - 1 C crushed Fiber One, Honey Bunches of Oats or favorite healthy cereal crushed.2 C peanut butter (I use Skippy Crunchy or Smooth, but any good peanut butter works fine)1C honey3/4 C mini chocolate morsels optional
Mix all dry ingredients, then add peanut butter and honey. It may take a few tries to get the consistency you prefer. It will be hard to stir, and sometimes I microwave on 50% power for 45 seconds to make easier to stir.
Once mixed thoroughly, form with hands and spoon into small balls. I line in a baking dish that can fit easily into refrigerator. Chill for one hour then separate into baggies. I freeze extras.
If there is any topping left in the bottom of the bowl, don’t toss it….it goes great as a topping on yogurt!!!
