Buckwheat, 1 cupRice flour, white, .5 cup (could substitute the above with 1 1/2 cup of other type of flour)Brown Sugar, .5 cup, unpackedOats, 1 cupBaking Soda, 1 tspBaking Powder, 2 tspSoy Milk, .75 cupSalt, 1 dash1 egg, slightly beatenApplesauce, unsweetened, .5 cup Vanilla Extract, .5 tspBanana, fresh, 1 cup, mashed (optional: chocolate chips)--60 grams of chocolate chips adds 25 calories to each muffin
Soak oats in milk.
In another bowl, combine flours, sugar, baking powder, soda, and salt.
Stir the milk, applesauce, (slightly beaten) egg and vanilla into the oat/milk mixture. Add the mashed banana (and optional chocolate chips), and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
Bake at 400 degrees F (205 degrees C) for 15-20 minutes or until toothpick comes out dry.
Makes 12 large muffins
