Pumpkin Posole

Ingredients
1 tablespoon olive oil1 lb boneless skinless chicken breast, cut into 1 inch pieces1 cup chopped onion1/2 cup sliced carrot1 cup sliced celery1 small can solid pack pumpkin1 3/4 cups chicken broth1 28 ounce can hominy1/2 cup sour cream1/2 teaspoon ground black pepper 1/2 teaspoon dried oregano, crushed1/2 teaspoon ground cumin1/8 teaspoon ground nutmeg
Directions
Heat oil in a large saucepan over medium-high heat.
Add chicken, onion and carrot; cook for 3 to 4 minutes or until chicken is no longer pink.
Add celery and cook for 3 to 4 minutes or until vegetables are crisp-tender.
STIR in pumpkin, broth, hominy, sour cream, cilantro, pepper, oregano, cumin, and nutmeg.
Reduce heat to low; cook, stirring occasionally, for 10 to 15 minutes or until flavors are blended.
