Ingredients
4 small potatoes, peeled and diced*1/4 Cup Onion, diced*1/4 Cup Bell Pepper, diced*1 Tb Butter1 Tb Olive Oil1/4 Tsp minced garlicSaltPepper
Directions
Peel and dice the potatoes. Heat a medium skillet on medium heat and melt half of the butter and then put in half of the oil. When shimmering, carefully put potatoes in the pan. After a few minutes, cover. Monitor the potatoes for brownness and crispiness. Cook them to your taste, though.

When nearly done, make a spot in the pan where the the onion and pepper can come in direct contact with the surface. Add remaining cooking agents, onion and pepper. Season with salt and pepper. Let let cook for a moment before incorporating.

During the last minute, add the minced garlic. Remove from heat and place in serving bowl. Let it only cool a couple minutes.
