Kale & Red Lentil Soup

2 tbsp extra light olive oil1 medium onion (about 1 cup) chopped4 garlic cloves chopped fine1 850 ml can of chopped kale1/3 cup red split lentils1/3 cup quinoa1.5 cups 1& buttermilk
Pour olive oil in heated pot; add onions and garlic and cook for 2 minutes. Add beef broth, canned kale, red lentils, quinoa, and 3 cups water and bring to a gentle boil. Simmer for 20 minutes. Add buttermilk and simmer 5 more minutes. Makes about 6 2 cup servings. More beef broth may be added as needed. Enjoy!
