Nummy Nutty Cocoa Cake

Ingredients
1/4 cup shortening1/4 cup chunky peanut butter2/3 cup honey5 oz silken tofu, pureed1 over-ripe banana, mashed smooth3/4 cup vanilla soy milk3/4 cup flour1/4 cup wheat bran1/4 cup ground flaxseed1/3 cup dark cocoa powder1 tsp baking soda1/2 tsp fine sea salt
Directions
Preheat oven to 350F. Grease an 8" square pan.
Cream together shortening, peanut butter and honey.
Add tofu puree, banana and soymilk, beating well.
Add flour, bran, flaxseed, cocoa, baking soda and sea salt to the mixture, mixing well. Add a little soymilk if necessary.
Bake for 40 minutes. Cool completely in pan before cutting and serving.
