Ingredients

    1 roma tomato
    half a large green pepper
    1 medium carrot
    half a large cucumber (with peel)
    1 medium stalk of celery (you can use the leaves, too)
    2 handfulls of fresh spinach (approx. 1/4 of a 10oz bag)
    pulp from half of a ripe avocado
    juice from half a lime
    half a tsp of sea salt (optional-included in nutritional info)
    half a cup of cold water
    4 ice cubes

Directions

Wash and roughly chop all vegetables and add to blender or smoothie machine. Squeeze the juice of half a lime over the top and add salt (optional) , half a cup of cold water and 4 ice cubes. Blend until smooth, pushing veggies down into blades if needed. Amounts may be adjusted to taste, and other veggies may be substituted depending on what you have in your veggie drawer. Lemon can be used instead of lime, but don't omit the half an avocado! It's what emulsifies everything into a truly smooth smoothie. This recipe makes 2 big (14 oz) glasses and it is amazingly satisfying as a light meal, a snack or as a substitute for a salad. Enjoy! :)
