IntroductionThis is a great way to make chicken with a nutty flavor and lots of protein!
I serve it with toasted pita bread cut into triangles, hummus and roasted red peppers. This is a great way to make chicken with a nutty flavor and lots of protein!
I serve it with toasted pita bread cut into triangles, hummus and roasted red peppers.
4 chicken breasts, butterflied
1 c cooked spinach
1/2 c hummus
1 tbsp chopped peanuts
Serves 4-8, depending on size of chicken breast
Spoon mixture onto right side of each chicken breast. Cover with left side, secure with toothpick (not necessary, but helpful).
Spray nonstick pan and cook chicken breasts 10 minutes on each side, or until juices run clear.
If baking, preheat over to 350, cook 20 mins, flip and cook another 20 mins. Finish by giving the breasts some "frying pan love" to turn outside lightly crispy and brown.
