Introduction

Ingredients

    1/2 seedless cucumber (usually english)
    1 cup plain yogurt (Thick)
    1 teaspoon fresh lemon juice
    1 small clove garlic, minced

Directions

Peel cucumber, grate, and squeeze to drain liquid out.

In a large bowl, combine the cucumbers, garlic, and yogurt and mix well.

Gets better as it sits.

    Drain yogurt through a sieve lined with cheesecloth overnight. Yogurt breaks down when stirred with too much force, so chop everything separately and gently fold into yogurt. Salt & drain the cucumbers for 1 hr. Use a dollop of sour cream also. - 5/15/12
