Field Camp No Bean White Chicken Chili

Introduction

I've had trouble finding a white chili without beans. At my senior Geography field camp, my prof made this and served it to me without garbanzo beans. I added corn myself to give it a little something else. I've had trouble finding a white chili without beans. Number of Servings: 5

Ingredients

    4 cans chicken broth
    4 chicken breasts (skinless, boneless)
    1 cup barley
    2 chiles chopped (I use jalapenos or serrano)
    1 Tbsp. oregano
    1 onion chopped
    1/2 cup cilantro
    salt and pepper
    2 cans garbanzo beans
    1 Tbsp. cumin

    Condiments:
    grated jack cheese
    limes
    chopped jalapenos
    chopped red onion
    chopped tomatoes
    sour cream
    cilantro

Directions

Dice chicken. Poach chicken in broth for 1/2 hour (or until chicken cooked through). Add barley, onions, chopped chiles, oregano, cumin, salt and pepper. Cook 1/2 hour or so until barley is tender. Add can of corn, heat through. Mix in cilantro and serve with condiments.

Good with cornbread. You can squeeze in a whole lime if desired. Make sure soup is bubbling hot before you serve because condiments cool it rapidly.

(If you do want beans, add 2 cans garbanzo beans with other main ingredients.)
