Ingredients

    * Onions, raw, 1 cup, chopped
    * *2 chopped green peppers
    * Garlic, 4 cloves , chopped
    * 4 Celery sticks chopped
    * 6 green onions, sliced
    * *Peanut or Canola Oil, 3 tbsp
    * *Del Monte Petite Cut Diced Tomatoes, 28 oz can
    *6 cups Natural Foods Organic Free Range Chicken Broth,
    * 1/2 # browned sliced sausage
    * Ham, extra lean, (5% fat), 1 cup, diced
    * Parsley, dried, 2 tbsp
    * Tabasco Sauce, 2 tsp
    * 1/4 cup Worcestershire Sauce,
    * Thyme, ground, 3 tsp
    * White Rice, long grain, 4 cup

Directions

Saute: onion, bell peppers, garlic, celery and scallions in 3 Tbl. canola or peanut oil.
Add: tomatoes and chicken broth
Simmer about an hour.
Add: sausage, ham and Parsley. Bring to a boil.
Add: Tabasco, Worcestershire and Thyme. Stir & let simmer about 20 minutes.
Add 2 cups uncooked rice & cover & cook 25 minutes or until rice is tender.
