Slow-Cooker Salsa Chicken


Slow-Cooker Salsa Chicken

Number of Servings: 6

Ingredients

    4 boneless, skinless chicken breasts
    1 cup salsa
    1 package reduced sodium taco seasoning
    1 can reduced fat cream of mushroom soup (condensed)
    1/2 cup reduced fat sour cream

Directions

Add chicken to slow cooker.
Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.
Serve with rice.

NOTES:
You may use half the packet of taco seasoning (I have started doing this to reduce sodium content myself)

Some slow cookers cook faster than others. Mine is a true slow cooker (have had it over 10 years.) The newer ones cook a bit faster and you may have to adjust your cooking time based on that!

    I thought the recipe needed a change so I cubed the chicken breasts and the last hour of cooking I added 1 can black beans drained and 2 cups frozen corn. I served in a bowl, added shredded cheddar and a tablespoon of sour cream on the side. It was quite good. I would make it again - 6/25/09

    This recipe is easy and delicious. One note though, I make it without the soup (cuts down calories and sodium) and sometimes add black bean and/or corn like some of the other reviewers. It is just as yummy without the soup for those who might want to omit it. - 7/11/09

    This is sooo easy and sooo good. We roll leftovers in a low carb tortilla with brown rice and warm in microwave. makes a great sandwich. - 6/23/09

    Excellent recipe. Like a couple of people said, I added some black beans and whole kernel corn along with some avocado slices and this is now one of my husband's and my favorite meals. Thanks. - 7/16/09

    I have made this recipe many times. I use up to 8 pieces of chicken with the same amount of other ingredients. This is a great recipe for the low carb set. - 7/27/09

    I omit the soup and add more salsa and add green peppers and some chopped jalapenos... Very spicy and very good .. and better for you than with soup. I like the idea of adding black beans which I will do next time.. - 1/5/10

    MY family loved this recipe. I added extra salsa and a fresh medium pepper and my family couldnt get over how good it was. I also did not add the whole taco seasoning recipe. I am trying to find recipes that are good for us and taste good. - 7/29/09

    Great receipe I just change the taco mix to avoid too much salt, it is easy to make your taco mix just use chili powder and cumin (salt optional)and it is great with or without mushroom cream soup - 1/26/10

    Used 5 very large split breasts. Left out soup + s.cream. Added green pepper + onion. Cooked 5 hrs on low. Then added 2 cans black beans (mashed one) + 1 can of corn. Cooked 1more hour on high. Had it alone first night. On a salad with cheese and 2T LF S.Cream the next. WOW! Was it DEEEELISH! : ) - 1/23/10

    Delicious! Definitely going to do only half a packet of seasoning next time, was pretty salty, but other than that so easy and tastes great with instant brown rice. - 7/13/09

    I made this for Father's Day and it was a huge hit! I left out the sour cream and it was still the best. My father in law is diabetic so we had it without rice as a breast. I had to print the recipe for them to take home! - 6/23/09

    A very very very simple and easy recipe that tastes pretty good! My husband hates mushroom soup, but he did like this recipe...except that he spied a mushroom and got suspicious. Note to self (blend soup in mixer to hide the mushrooms). - 7/15/09

    I have made this a few time and it is always a hit. I shred the chicken and use it as a filler for tacos! I also add black beans for extra protien and use Cream of Chicken on mushroom soup if you want to try that! - 1/12/10

    how does this get served? One piece of chicken but how much of the sauce to equal the calorie intake? I would think with all the leftover sauce you are not eating the exact calories per serving. - 1/2/10

    I made this recipe this weekend and found it absolutley delicious! I shredded the chicken and added black beans and corn. I've had it over rice, and rolled in a whole wheat tortilla, and both ways didn't disappoint. - 7/29/09
