Introduction

A wonderful green salad with sweet cherries and almonds mixed in. Great when fresh sweet cherries are in season! A wonderful green salad with sweet cherries and almonds mixed in. Great when fresh sweet cherries are in season!
Number of Servings: 4

Ingredients

    2 T olive oil
    4 t white wine or cider vinegar
    1 T minced shallot
    1 t prepared horseradish
    1 t sugar
    1/8 t salt
    1/8 t pepper
    2 c pitted, fresh sweet cherries (cut in halves)
    4 c mixed greens
    3 T slivered almonds
    1/4 c fresh basil leaves

Directions

1. For dressing, combine oil, vinegar, shallot, horseradish, sugar, salt, and pepper. Set aside.


2. In a large salad bowl, combine the greens and 1 3/4 c cherries. Toss with salad dressing. Sprinkle salad with almonds, basil, and reserved 1/4 c cherries.

Makes 4 servings

    Pretty tasty - Good for some special occasion perhaps but I think it's a real travisty to ruin good fruit by pickling it with salad dressing - 6/29/10
