    2 CUPS SUGAR
    1 CUP VEGETABLE OIL
    3 EGGS
    2 CUPS RAW ZUCCHINI
    1 TEASPOON BAKING SODA
    1 CUP CARROT, GRATED
    3 TEASPOONS VANILLA
    3 CUPS FLOUR
    1 TEASPOON SALT
    1 TEASPOON CLOVES
    1 TEASPOON NUTMEG
    1 TEASPOON CARDAMOM
    3 TEASPOONS CINNAMON
    3/4 TEASPOON BAKING POWDER

Directions

PREHEAT OVEN TO 350
BUTTER 2 LOAF PANS
IN LARGE BOWL , BEAT EGGS UNTIL LIGHT AND FLUFFY. ADD SUGAR, OIL, ZUCCHINI, CARROT, AND VANILLA, MIX WELL.
IN ANOTHER BOWL MIX DRY INGREDIENTS TOGETHER, THEN ADD TO THE WET INGREDIENTS, MIX WELL. POUR INTO LOAF PANS AND BAKE FOR AN HOUR. LET COOL FOR 10 MINUTES PRIOR TO SERVING
