Ingredients

Cupcake:
1 Cup Sugar
1/2 Cup Unsalted Butter
2 Med Eggs
2 Tsp Vanilla Extract
1/2 Cup Flour
1/2 Cup Milk
1-3/4 Tsp Baking Powder
1/2 Cup crushed drained pineapple
Frosting:
1 cup Unsalted Butter
3 tbsp coconut milk
3 ups powdered Sugar
Blue Food coloring
Blue and White sugar sprinkles to garnish
Directions
Makes 24 ea Blue Hawaii Cupcakes.
Set oven to 350
Cream sugar and butter until fluffy.
Add in eggs and vanilla.
Add in dry ingredients.
Add in pineapple.
Fill cupcake cups 3/4 full and bafe for 30 minutes.
For frosting:
Butter at room temp food processor until creamy add in coconut milk and spoon in the powdered sugar until creamy and stiff. Add in food coloring. Pipe onto cooled cupcake.
