Introduction

Ingredients

    1 Pillsbury devils food cake mix
    3/4 cup egg beaters
    1/2 cup applesauce

    1 20oz package of frozen strawberries, semi thawed and chopped
    a little no calorie sweetener
    1 tbspn cornstarch
    2 tsp. cold water
    1 8oz. container of Cool Whip Free
    6-7 fresh strawberries
    1/2 cup semi sweet chocolate chips
    2 Tbspn margarine

Directions

Bake the cake mix in two 8 inch round pans according to package directions, substituting the three eggs for the egg beaters and the oil for the applesauce. When cake is done take out and cool completely. Meanwhile, place frozen strawberries in a saucepan and cook until mushy and falling apart. Sweeten with no calorie sweetener to taste and thicken with the cornstarch and water mixture. When thickened, remove from heat and cool.

To assemble: Place one of the cake rounds on a cake plate and top with 1/2 of the strawberry mixture. Then place the other cake round on top of that: top with the remaining strawberry mixture. Cover the top and sides of the cake with the cool whip free and decorate with the fresh strawberries on top. Mix the chocolate chips and margarine in a small bowl and put in the microwave on high for 30 seconds at a time until melted and smooth. Drizzle chocolate over the top and sides of the whole cake.
