1 1/4 cup dried lentils14.5oz can diced tomato1 large carrot,chopped1stalk celery,chopped4cups vegetable broth2clove garlic, chopped1 medium onion,chopped3tbs olive oil
Heat olive oil on medium-high heat and add onion, carrot, celery, and garlic. Cook until beginning to brown. Add vegetable stock, lentils and diced tomatoes with juice. Boil, then lower heat and simmer, covered, about 35 minutes until lentils are tender. Great with fresh crusty bread. Reheats well.
