Wheat Barley Crunch Muffin

1/4 cup milk1/4 tsp salt2 tsp baking powder3 Tbsp vegetable oil1 cup wheat barley crunchy cereal1 cup whole wheat flour2 eggs1/2 cup raisins & dates1/4 cup semi-sweet chocolate chips1 tsp vanilla
In a teacup stir together raisins, dates and vanilla. Allow to soak, stirring occassionally for 10 minutes.
Combine in a mixing bowl the milk, salt, baking powder, cereal, vegetable oil and wheat flour. Add eggs and beat hard for 1 minute. Add raisins & dates & vanilla; beat. Add chocolate chips.
Spoon into muffin pans and bake 400 degrees for 15 to 20 minutes. Do not overbake. Makes 12 muffins.
