- 1 cup bulgar wheat, dry- 1 1/2 cup boiling water- 1/4 cup lemon juice- 1/4 cup olive oil (use less if you prefer)-- 2 cloves garlic, minced- 4 scallions, minced- 1 packed cup of parsley, minced- 10 - 15 mint leaves OR 1-2 tbsp dried mint, chopped- 2 medium tomatoes, diced- 1 cup cucumber, diced
makes 6 - 8 servings
- Put the bulgar in the bowl, cover with boiling water and let stand until tender (at least 20 minutes)
- Add lemon juice, oil and garlic. Mix well. Cover and refrigerate for at least 1 hour
- 30 minutes before serving, mix in remaining ingredients. Serve cold. Enjoy!
